The controller is preprogrammed to keep the unit in the safety zone to avoid any issues with health inspectors. A spacious, 11 1/2″ deep, full-length cutting board acts as the main staging area for all of your culinary creations, providing plenty of room for sandwiches and salad bowls. The cutting board can even be removed for easy cleaning or swapped out with another board of your choosing. The top has the ability to hold up to (12) 1/6 size pans at the same time (sold separately). Five pan dividers are included, plus a fan directs cold air to the pan area for safe holding. The interior of this unit has 12 cu. ft. of storage capacity for backup pans of ingredients and two adjustable shelves for organization. The shelves can each hold up to 88 lb. The insulated lid improves efficiency during off hours by locking in cold air on the top pan area. For easy access, the lid also includes a handle and hinges so that it can be raised during service hours. The door gaskets are easy to remove for thorough cleaning and sanitation. This doors close automatically to help conserve energy. Foamed-in-place insulation keeps the interior cold and adds structural strength.
